Garlicky spinach and feta dip
Ingredients
- 1 10-ounce package frozen chopped spinach, thawed and well drained
- 1 10-ounce carton garlic-flavor Philly Cooking Creme or cream cheese
- 1 cup plain Greek yogurt
- 1 cup mayonnaise
- 1 cup crumbled feta cheese (4 ounces)
- 1/3 cup sliced pitted Kalamata olives
- 1/4 cup chopped green onions (2)
- 2 tablespoons dried tomato pesto
- Freshly ground black pepper
- Crispy Pita Chips, purchased pita chips, multigrain snack chips, and/or assorted vegetable dippers
Directions
- Preheat oven to 425°F. Using paper towels, squeeze out any excess liquid in spinach.
- In a medium bowl combine spinach, cream cheese, yogurt, mayonnaise, 3/4 cup of the feta cheese, the olives, 2 tablespoons of the green onions, the pesto, and pepper. Transfer spinach mixture to a seasoned or generously greased 8- to 9-inch cast-iron skillet. Sprinkle with remaining 1/4 cup feta cheese.
- Bake about 20 minutes or until heated through and bubbly around the edge. Sprinkle with remaining 2 tablespoons green onions. Serve dip with Crispy Pita Chips. Makes 32 servings, 2 tablespoons each.
